Tasting Note
This wine has a purple colour and a complex nose of red fruits and spices. It is structured on the palate with supple and silky tannins. It is the perfect balance between the Pinot Noir aromas and the structure of this grape variety made to last.
Food and wine pairing
Its finesse and elegance marry well with a Bresse chicken, braised red meat or fromage frais.
Soils
"Sous le Château": one plot, two clay-limestone soils. Set at the foot of the medieval Château de Groslée it has lain forgotten since the 19th century and untouched by chemical products. I decided to revive this unique terroir and express its duality using two grape varieties. Through ageing in barrels for several months, I sought a balance between aromatic complexity and the grape's structure.
