Soil
The formation of the French Prealps and the Ice Age have created a very heterogeneous chaotic soil. However, two types of soils can be distinguished: firstly a clay and limestone soil (white clay, mountain scree) and secondly a silica and limestone molasse (moraine deposits).
Grape variety
Pinot Noir (20%) and Gamay (80%)
Vinification
Saignée rosé obtained the same way as our still rosé. Bubbles are added by the traditional method, with a "foam taking" (bottle fermentation) step of at least 9 months. We carry out all these operations, including disgorging, ourselves.

Characteristics
A rosé wine with salmon-pink shades with highly elegant fine foam and bubbles, a nose with aromas of candied fruit (quince). These aromas linger in the mouth, set off by the harmonious effervescence and a structure balancing sweetness and freshness.
Serve with:
Aperitifs, fruit-based desserts or galettes.
