Soil
The formation of the French Prealps and the Ice Age have created a very heterogeneous chaotic soil. However, two types of soils can be distinguished: firstly a clay and limestone soil (white clay, mountain scree) and secondly a silica and limestone molasse (moraine deposits).

Grape variety
100% gamay

Vinification
The wine is obtained after carbonic maceration for 5-6 days following a hot pre-fermentation maceration (50 - 60°C for about 12 hours), then the alcoholic fermentation is completed in liquid phase (after pressing) at low temperature. These operations lead to the optimal extraction of the grape variety's characteristic aroma potential. We carry out all the wine making, ageing and bottling ourselves.



Characteristics
Young, it has a deep lustrous colour with ruby highlights, a simple but intense nose of fresh summer fruits with its equivalent in the mouth framed by a pleasant structure, as expected from Gamay.

Serve with:
Delicatessen products, grilled dishes, fish.
