ECLAT D'UNE ROSE
 
 

Soil
The formation of the French Prealps and the Ice Age. Very heterogeneous chaotic soil. However, two types of soils can be distinguished: firstly a clay and limestone soil (white clay, mountain scree) and secondly a silica and limestone molasse (moraine deposits).

Grape variety
Gamay (80%) and Pinot Noir (20%)

Vinification
Saignée rosé obtained from low-temperature (8 - 10°C) maceration for about 12 hours in a CO2-controlled atmosphere. This operation is essential to obtain a rosé which balances delicate colour and fine aromas. After pressing, temperature-controlled alcoholic fermentation in vats. We carry out all the wine making, ageing and bottling ourselves.



Characteristics
A rosé wine with the same delicate shades as a rose, very good expression of fruity aromas, good structure in the mouth.
% vol: 11.62; total acidity in g of H2SO4/L: 4.98; malolactic not carried out.


Serve with:
Aperitifs, delicatessen products, grilled dishes and other simple yet convivial dishes.
