Soil
The formation of the French Prealps and the Ice Age have created a very heterogeneous chaotic soil. However, two types of soils can be distinguished: firstly a clay and limestone soil (white clay, mountain scree) and secondly a silica and limestone molasse (moraine deposits).

Grape variety
100% pinot noir

Vinification
After selection and harvesting by hand, the partially destalked or whole grape harvest is vatted in an atmosphere saturated with CO2 where it undergoes a cold pre-fermentation maceration (8 - 10°C for 48 hours), then alcoholic fermentation starts with a traditional maceration of about ten days. After the wine comes into being, it is aged in barrels for at least 10 months. We carry out all the wine making, ageing and bottling ourselves.



Characteristics
Peut-être le plus noble des cépages rouges mais aussi le plus capricieux car très sensible au millésime, il offre une robe rubis sombre parfois, un nez fruit rouge toujours, une bouche complexe avec des tanins soyeux souvent. Certains millésimes peuvent se faire attendre.

Serve with
Sa finesse et son élégance accompagneront à merveille un poulet de Bresse, une viande rouge braisé ou un fromage frais.
