Soil
The formation of the French Prealps and the Ice Age have created a very heterogeneous chaotic soil. However, two types of soils can be distinguished: firstly a clay and limestone soil (white clay, mountain scree) and secondly a silica and limestone molasse (moraine deposits).

Grape variety
100% pinot noir

Vinification
After selection and harvesting by hand, the partially destalked or whole grape harvest is vatted in an atmosphere saturated with CO2 where it undergoes a cold pre-fermentation maceration (8 - 10°C for 48 hours), then alcoholic fermentation starts with a traditional maceration of about ten days. After the wine comes into being, it is aged in barrels for at least 10 months. We carry out all the wine making, ageing and bottling ourselves.



Characteristics
This may be the most noble of red grape varieties, but it is also the most temperamental as it tolerates no negligence from the vine to your glass.
With a dark ruby colour, with a very fine nose of summer fruits, its complex structure and silky tannins make it a wine with a rare elegance. Perfect for drinking immediately or for keeping for several years.


Serve with
An ideal accompaniment for a delicious Bresse chicken, braised red meat or fromage frais.
