Soil
The formation of the French Prealps and the Ice Age have created a very heterogeneous chaotic soil. However, two types of soils can be distinguished: firstly a clay and limestone soil (white clay, mountain scree) and secondly a silica and limestone molasse (moraine deposits). The former is the soil of choice for this grape variety.

Grape variety
100% Mondeuse, a very old French grape variety and native to Bugey that is ampelographically very close to the Syrah grape variety.

Vinification
After selection and harvesting by hand, the whole grape harvest is vatted in an atmosphere saturated with CO2 where it undergoes a cold pre-fermentation maceration (8 - 10°C for 48 hours), then alcoholic fermentation starts with a traditional maceration of about ten days. After devatting, malolactic fermentation is rapidly obtained before it is put in barrels (500 litres) to age for 12 months. We carry out all the wine making, ageing and bottling ourselves.



Characteristics
ce vin d’une robe pourpre, au nez complexe de fruits rouges, épices, bouche structurée avec des tanins souples et soyeux ; Racé, il peut se faire oublier une dizaine d’ années.

An ideal accompaniment for braised meats, stews and cheese.
